There are a lot of music apps that we reported on like Guitar Hero, Tap Tap Revenge, and most recently, Lyric Legend.
According to my Source, Seline HD has a huge variety of options that make any other music game seem like small potatoes in comparison. It has an ergonomic, split playing surface, as well as a way of playing 20 odd instruments and drone sounds. You can also “overdub recordings on top of yourself”.
You should be able to get this for the iPad for just $9.
